I can’t get over anything that has to do with tomatoes and massive amounts of fresh basil (especially together!). It’s just so delicious!!! Last night I sliced up a tomato, tore up some basil leaves, put a little olive oil, salt and pepper on it and crumbled a little goat cheese on top. The result? HEAVEN. The creaminess of the goat cheese was a great addition. I added it to my dinner in lieu of a starch. Here’s what it looked like:

I just threw the pork chop on the George Foreman with some adobo seasoning. The picture is a little fuzzy near the chop cause it was still steamy haha. I bought the broccoli fresh so I just chopped it up, threw it in some boiling water for a little bit until tender (don’t leave it in too long or it’ll get mushy and flavorless!) then I squeezed on some lemon juice and sprinkled with salt and pepper. It was so good!
